
I love to make frittatas! They can be made for breakfast, lunch or even a light dinner. They can also be filled with any leftover veggies, meats, spices, or cheeses than you can find in the darkest depths of the fridge.
Well, this sounds amazing, Andrea- but I have never made a frittata before!
You have come to the right place. . .this is the basic recipe that I have learned in order to make a frittata plus I have included links to several other sites with frittata ideas/recipes that you can try out and customize any way you see fit!

You will need the following ingredients to make a frittata:
- eggs (8 large eggs)
- olive oil (2 tbsp)
- cheese (pick something that you LOVE) (1-1 1/2 cups)
- cooked veggies of your choice (2 cups)
- heavy cream (or any dairy free option)
- salt (1/2 tsp) and pepper (1/4)
- any other herbs or seasonings
Preheat the oven to 325 degrees F. Add some olive oil to a cast iron skillet over medium heat. Add finely chopped veggies of your choice and stir to combine. Take off after veggies have been cooked until softened.
In a medium sized bowl, combine using a whisk: eggs, cream, salt and pepper. Add the cooked veggies and cheese of your choice. Stir together and pour the mixture back into the cast iron skillet. Place in the oven and bake until set around 20 minutes. (Make sure to be careful when taking the skillet out of the oven as it can get extremely hot!)
You can pair this amazing dish with a salad or roasted potatoes!
Some possible mix-ins include:
veggies: peppers, broccoli, mushrooms, zucchini, onions, tomatoes, garlic
greens: spinach, kale, collard greens, beet greens
cheese: Gruyere, Cheddar, Pepper Jack
protein: bacon, sausage, ham, chicken, turkey, salmon, crab
toppings: parmesan cheese, pesto, sour cream, marinara sauce, pico de gallo, or avocado
